Blueberry Balsamic & Whipped Goat Cheese Crostini

Blueberry Balsamic &
Whipped Goat Cheese Crostini

This gourmet yet simple and healthy crostini is not only fantastic for breakfast, but it makes a tasty appetizer for your next party. Crostini’s are an Italian appetizers meaning  “little toasts”.

This recipe reminds me of summer early morning having coffee and toast in my backyard while enjoying the quiet and warm weather. Well, before it gets fiery hot….

You can customize this recipe to have it be the perfect reason to enjoy your morning routine.

    • 8 ounces goat cheese ( or cream cheese)
    • 1/2 cup heavy cream
    • pinch of salt
    • 10 ounces blueberries
    • zest of 1 lemon
    • tablespoon lemon juice
    • 1 tablespoon chopped fresh rosemary
    • balsamic reduction
    • French bread slices (or any bread that you like)

Place the goat cheese and cream in a bowl and add salt and beat it with a hand mixer until thick and smooth. The texture should be ready for spreading on toast.

In a bowl, add the blueberries, lemon zest, lemon juice and toss until well-combined. The berries will releas their natural juices and start to get sweeter.

Toast your bread in a toaster or butter both sides and grill them on a hot skillet till they turn golden brown.

Assembly time:  First, spread the goat cheese (cream cheese) mixture to the toast, top with the blueberries, and finish with a drizzle of balsamic reduction.  Sprinkling some fresh rosemary for added flavor.
