Whipped Goat Cheese Crostini

You can customize this recipe to have it be the perfect reason to enjoy your morning routine.
- 8 ounces goat cheese ( or cream cheese)
- 1/2 cup heavy cream
- pinch of salt
- 10 ounces blueberries
- zest of 1 lemon
- tablespoon lemon juice
- 1 tablespoon chopped fresh rosemary
- balsamic reduction
- French bread slices (or any bread that you like)
Place the goat cheese and cream in a bowl and add salt and beat it with a hand mixer until thick and smooth. The texture should be ready for spreading on toast.
In a bowl, add the blueberries, lemon zest, lemon juice and toss until well-combined. The berries will releas their natural juices and start to get sweeter.
Toast your bread in a toaster or butter both sides and grill them on a hot skillet till they turn golden brown.
Assembly time: First, spread the goat cheese (cream cheese) mixture to the toast, top with the blueberries, and finish with a drizzle of balsamic reduction. Sprinkling some fresh rosemary for added flavor.
